Fran Pork Chops

pork chops (about 1 ½ lb, can be boneless)

Tbsp. oil
1
minced garlic glove
Sauce:

tsp. oil
2 Tbsp. brown sugar

Tbsp. dry sherry or broth ¼ tsp. crushed
red pepper

Tbsp. soy sauce 2 tsp.
cornstarch

Tbsp. water
Heat
large skillet with oil and brown chops on both
sides. Remove; add a little more oil if needed and
sauté garlic 1 minute. Do not burn. Combine in small
bowl oil, sherry/broth, soy sauce, brown sugar, and
red pepper. Put chops back in skillet and pour sauce
over: cover pan. Simmer until done about 30 minutes.
Add a little water if needed. Turn chops once.
Remove chops to platter; stir in cornstarch and
until thickened. Pour over meat. Serve with noodles.
