This recipe
is not from a railroad but from Alice’s Recipe for Sweet
Potato Casserole she had at the PGRS picnic in August
3 cups canned
or fresh sweet potatoes mashed. ( she uses a hand mixer to
mash the potatoes)
1/2 cup sugar
1/2 cup
butter
1 beaten egg
1 tsp.
vanilla
1/3 cup milk
drain
potatoes, mash and add remaining ingredients blend together
with mixer.
Topping.
1/3 cup
butter
1 cup brown
sugar
1 cup chopped walnuts
1/2 cup flour
Modification- for those allergic to nuts- omit nuts and flour and use corn flakes instead.
