The Dining Car

With summer just around the corner its Zucchini time so there a recipe I got off of one of lady down at the church.

Zucchini Bars

2/3 cups packed brown sugar                            1 tsp. baking soda

¼ cup butter, softened                                       ½ tsp. cinnamon

½ tsp. vanilla                                                      ½ tsp. ground cloves

1 egg                                                                  1 cup pressed zucchini

1 cup flour                                                          ½ chopped nuts

 

Spice Frosting (Mix all ingredients until smooth and spreadable)

¾ cup powdered sugar                                         ½ tsp. ground cloves

1 Tbsp. butter                                                         3 to 4 tsp. milk

 

Pre-heat oven 350, Grease bottom and sides of 8 or 9 inch square pan. Mix brown sugar, butter, vanilla, and egg in large bowl. Stir in flour, baking soda, cinnamon, and cloves. Stir in zucchini and nuts. Spread in pan. Bake 25 to 30 minutes. Cool completely about an hour. Frost and cut into 24 bars.

 

For Christmas bars, lightly sprinkle frosting with red and green sugar; add ½ cup chopped dried cranberries.
