Oven Pittsburgh Omelet
 


8 eggs
1 cup milk
1/2 tsp. seasoned salt
2 cups frozen shredded hash brown potatoes
1 cup diced ham or 1 cup fully cooked sausage
1Tbsp. dried minced onion

In a large bowl, beat eggs, add milk and salt, continue mixing and add our choice of meat, potatoes and onions. Pour into 8-inch square baking dish. Bake uncovered at 350 for 45 minutes, or until knife inserted in center comes out clean. Recipe may be doubled and cooked in 9 X 13-inch pan; bake for 1 hour 15 minutes. Again, check for clean knife.

When I got this recipe, it was an inexpensive way of feeding a group of people breakfasts. But with today prices for eggs, I don't know.
