Deep-Fried Ravioli with Tomato Dipping Sauce

Before you Begin you’ll need: medium bowl, large pot, deep-fryer or large skillet

Prep: 20 minutes

Cook: 30 minutes

Yield: 6 servings

Tomato Dipping Sauce

1 15-oz. can tomato sauce                                          1 tsp. dried Italian seasoning

1 cup finely chopped fresh tomatoes                         2 tsp. green onion, chopped

˝ cup finely chopped sun-dried tomatoes, packed in olive and herds

In a medium bowl, combine tomato sauce, fresh tomatoes, sun-dried tomatoes, and seasoning. Cover and refrigerate overnight. To serve, garnish with green onion, set bowl on a platter, and surround with fried ravioli.

Fried Ravioli

1 25-oz. package frozen small square cheese-filled ravioli

4 cups olive oil

In a large pot of boiling water, cook frozen ravioli according to package directions and drain well. Meanwhile, in a deep-fryer, warm olive oil to 375 F or, in a large skillet over medium-high heat, warn1/2 inch of oil.  Place cooked ravioli in the fry basket and immerse in oil to cook until golden brown, shaking basket occasionally, about five minutes. If using a skillet, place sufficient cooked ravioli to form a single layer in the hot oil and fry both sides until golden brown, about 2 minutes per side Repeat until all ravioli are fried. Remove fried ravioli to plat line with paper towels and keep warm.
