Kentucky Beer
Cheese from My Old Kentucky Dinner Train
Before you Begin:
You’ll need, grater, electric mixer (this is easier to make in a
standing mixer with a paddle attachment rather than with a
hand-held mixer) large mixing bowl
Prep:
10 minutes (plus 6-12 hours to induce stale beer), 6-12hours to
blend, and 1 hour to come to room temperature before serving.
Yield:
12 servings
1 lb. sharp
cheddar cheese
1 tsp. onion powder
˝ lb. cream
cheese 1
tsp. Tabasco sauce, more if desired
1 tsp. garlic
powder 12 oz.
stale beer (see note)
Note:
to make beer stale, open and let sit out overnight, or pour into
a shallow container and let sit for a couple of hours.
Grate cheddar
cheese cold, and then let both cheeses warm to soften. Place
seasoning ingredients and ˝ of the beer in a mixing bowl and mix
with an electric mixer set on Mix. Add cheeses and continue to
mix until well blended. Add sufficient remaining beer to get a
smooth consistency. Pack mixture into a serving bowl and cover
tightly, Refrigerate at least 6 hours or overnight, until hard.
Before serving, allow to come to room temperature. Serve
accompanied by celery and carrot sticks and crackers.
When I make this
I use aged New York sharp cheddar cheese, and always double the
recipe, it goes very fast at a party, and is always a big hit.
