Hobo Stew or
Mulligan Stew
By definition,
Mulligan stew is made up of any available ingredients this
recipe is attributed to the movie “Emperor of the North”
starring Lee Marvin
Before you begin
you’ll need:
large pot, Prep: about 20 minutes, and cooking time 1
hour 45 minutes, Yield 8 servings
2 cups
water 1lb.
Turnips, cubed
1 cube chicken
bouillon 1 tsp. salt,
or to taste
2 lbs. lamb,
beef or chicken for stew
˝ tsp. pepper, pr to taste
2 lbs. potatoes
cubed, divided 2
Tbsp. malt vinegar
1 lb. onions,
chopped
In a large pot
over medium-high heat, bring water to a boil. Add bouillon cube
to dissolve. Add lamb, beef or chicken and return to the boil.
Add half the potatoes, reduce heat to medium, cover, and simmer
45 minutes. Stir in onions, turnips, and remaining potatoes,
cover, and simmer for 30 minutes, Add salt, pepper, and malt
vinegar, the simmer, uncovered, for 10 more minutes. Serve hot.
Of course this
is Mulligan stew, so substitute ingredients are welcome, and
it’ll still be an authentic hobo stew. I used beef and lightly
browned it before adding it to the pot, and substitute carrots
for turnips. This makes a very good meal for a cold winter day.
The National
Hobo Convention in Britt, Iowa held Mid August every year. This
is for hobos, retired hobos, and those who have what is called a
“hobo’s heart.” they make hobo stew to be served at the
convention, and they start with nine hundred pounds of beef. For
